Preheat oven to 250 degrees. Place popcorn in a very large bowl. In a medium saucepan over medium heat, melt the butter. Stir in the brown sugar, corn syrup and salt. Bring the mixture to a boil and stir it constantly. Boil without stirring for four minutes. Remove the mixture from the heat and stir in the baking soda and vanilla. Pour in a thin stream over the popcorn and stir it to coat. Place the popcorn in two large, shallow baking dishes and bake them in the preheated oven for 30 minutes. Rotate and flip the popcorn every 15 minutes and serve while warm.
