Blackberry Cobbler

  • 2 tbsp. cornstarch
  • 1/3 cup cold water
  • 1 1/4 cups sugar
  • 1 tbsp. lime juice
  • 3 cups frozen or fresh blackberries
  • 1 cup flour
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 6 tbsp. chilled and cubed butter
  • 1/4 cup boiling water

Combine cornstarch and cold water in a large bowl until dissolved. Add one cup of sugar, lime juice, and blackberries and stir gently. Place mixture in a large skillet. In another bowl, combine flour, left-over sugar, baking powder and salt. Slowly add in butter and add boiling water and stir until a dough forms. Bring the blackberries to a boil, stirring constantly. Drop tablespoons of the dough into the boiling blackberries and transfer to a baking sheet. Bake for 20 minutes at 425 degrees until the top is browned. Serve with whipped cream.

Apple Cake

  • 3 apples, any variety, sliced thinly
  • 2 cups yellow cake mix
  • 1 tsp. baking powder
  • 1/2 tsp. cinnamon
  • 1/4 tsp. ground nutmeg
  • 1/8 tsp. ground ginger
  • 1/3 cup plain applesauce
  • 1/4 cup club soda

Add half of the apples to a skillet and cook over medium heat with butter. Stir often until they're soft and then set aside. Combine cake mix, baking powder, cinnamon, nutmeg, and ginger in a large bowl. Add applesauce and soda and stir until there are no lumps. Add cooked apples. Transfer to a round cake pan (greased) and make sure all the apple is covered with batter. Lay the remaining apple slices on top and bake at 350 degrees for 30 minutes.
